  • 2-3 ripe bananas, mashed about 1 cup
  • 1 large egg lightly beaten
  • 1/2 cup milk whole milk recommended for richness
  • 1 tbsp granulated sugar adjust to taste
  • 1 tsp vanilla extract
  • 1 cup all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp ground cinnamon
  • Pinch salt
For Frying & Serving
  • 1-2 inches Vegetable oil for frying
  • Optional toppings Powdered sugar, maple syrup, honey, fresh fruit, cinnamon sugar, vanilla ice cream, fresh berries, whipped cream, crispy bacon, fried egg.

Method
 

Preparation
  1. Mash the ripe bananas in a medium bowl until mostly smooth, leaving a few small lumps for texture.
  2. Add the beaten egg, milk, granulated sugar, and vanilla extract to the mashed bananas and stir gently to combine.
  3. In a separate, larger bowl, whisk together the flour, baking powder, cinnamon, and salt for even distribution.
  4. Pour the wet banana mixture into the dry ingredients and mix with a spoon or spatula until just combined, being careful not to overmix.
Cooking
  1. Heat about 1-2 inches of vegetable oil in a large skillet or Dutch oven over medium heat to 350-375°F (175-190°C).
  2. Drop dollops of batter into the hot oil using a tablespoon or small cookie scoop, frying in batches to avoid overcrowding.
  3. Fry each side for 2-3 minutes until the fritters are deeply golden brown and cooked through, ensuring they puff up nicely.
  4. Remove cooked fritters with a slotted spoon and place them on paper towels to drain excess oil.
Serving
  1. Serve the fritters warm, optionally dusting with powdered sugar, drizzling with maple syrup, or adding your favorite toppings.

Notes

For extra crispiness, ensure the oil is at the correct temperature before frying. Do not overcrowd the pan to maintain oil temperature and facilitate even cooking. These fritters are best served immediately after frying with your favorite toppings.
