Ingredients
  

Meatloaf
  • 1.5 lbs ground beef 80/20 lean
  • 1 large egg beaten
  • 1/2 cup breadcrumbs panko or regular
  • 1/2 cup milk
  • 1/2 cup finely chopped onion
  • 1/4 cup finely chopped green bell pepper
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon garlic powder
  • 1 teaspoon dried parsley
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
Glaze
  • 1/2 cup ketchup
  • 2 tablespoons brown sugar
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon mustard Dijon or yellow

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C). Then, lightly grease a loaf pan or line a baking sheet with a greased wire rack.
  2. In a large mixing bowl, beat the egg and then whisk in the milk and Worcestershire sauce.
  3. Add the breadcrumbs, chopped onion, green bell pepper, garlic powder, parsley, salt, and pepper to the wet ingredients and stir gently to combine.
  4. Add the ground beef to the mixture and gently mix with your hands until all ingredients are evenly distributed, avoiding overmixing to prevent a tough meatloaf.
Cooking
  1. Transfer the meat mixture to the prepared loaf pan or form into a loaf shape on the wire rack and bake for 45 minutes.
  2. While baking, whisk together ketchup, brown sugar, apple cider vinegar, and mustard in a small bowl to make the glaze.
  3. After 45 minutes, remove the meatloaf from the oven, spread the glaze over the top, and return to the oven for another 15-20 minutes, or until the internal temperature reaches 160°F (71°C).

Notes

Serve with mashed potatoes and green beans for a complete meal. Leftovers can be stored in the refrigerator for up to 3-4 days.
