  • 1 tablespoon Olive Oil
  • 1 teaspoon Kosher Salt
  • 1/2 teaspoon Black Pepper
  • 1 teaspoon Garlic Powder
  • 1/2 teaspoon Onion Powder
  • 1/2 teaspoon Dried Thyme
  • 1/2 teaspoon Dried Rosemary crushed
  • fresh rosemary or thyme sprigs Optional
  • lemon wedges Optional, for baking

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. Pat the chicken thighs dry with paper towels to ensure crispy skin.
Seasoning
  1. Drizzle olive oil over the chicken thighs in a bowl.
  2. Sprinkle all the seasonings over the chicken and toss to coat each piece evenly.
Baking
  1. Arrange chicken skin-side up on a baking sheet, ideally with a wire rack. Add optional fresh herbs or lemon wedges.
  2. Bake for 35-45 minutes until the internal temperature reaches 165°F (74°C) and the skin is golden and crispy.
Resting and Serving
  1. Remove from oven, tent with foil, and let rest for 5-10 minutes to redistribute juices.
  2. Serve hot and enjoy the juicy chicken.

Notes

For extra flavor, marinate the chicken for at least 30 minutes or up to 4 hours in the refrigerator. Ensure chicken is at room temperature before baking for even cooking.
