  • 1 pound lean ground beef
  • 1 tablespoon olive oil or sesame oil
  • 1 large onion chopped
  • 2 cloves garlic minced
  • 1 cup broccoli florets
  • 1 red bell pepper sliced
  • 1 cup snap peas
Stir-Fry Sauce
  • 1/4 cup soy sauce low sodium preferred
  • 2 tablespoons hoisin sauce
  • 1 tablespoon rice vinegar
  • 1 teaspoon grated fresh ginger
  • 1 teaspoon cornstarch
  • Pinch red pepper flakes optional
For Serving & Garnish
  • Cooked rice or noodles for serving
  • Sesame seeds optional
  • sliced green onions optional

Method
 

Preparation
  1. Whisk together soy sauce, hoisin sauce, rice vinegar, ginger, and cornstarch in a small bowl until smooth, then set aside. Add red pepper flakes to the sauce if desired.
Cooking
  1. Heat oil in a large skillet or wok over medium-high heat. Add ground beef and cook, breaking it apart, until browned; drain excess grease.
  2. Add chopped onion to the skillet with the beef and cook for 3-4 minutes until softened, then stir in minced garlic and cook for another minute until fragrant.
  3. Add broccoli florets, sliced red bell pepper, and snap peas to the skillet and stir-fry for 5-7 minutes until vegetables are tender-crisp.
  4. Re-whisk the sauce and pour it over the beef and vegetables, stirring continuously for 1-2 minutes until the sauce thickens and coats everything evenly.
Serving
  1. Remove from heat and serve immediately over cooked rice or noodles. Garnish with sesame seeds and sliced green onions, if desired.

Notes

For an extra kick, increase the amount of red pepper flakes or add a dash of sriracha to the sauce. You can also customize the vegetables based on what you have on hand, such as carrots, mushrooms, or bok choy.
