  • 1/4 cup milk
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup fresh spinach, roughly chopped
  • 1/2 cup crumbled feta cheese
  • 1/4 cup cherry tomatoes, halved optional
  • 1 tablespoon olive oil or cooking spray for greasing

Method
 

Preparation
  1. Preheat the oven to 375°F (190°C) and lightly grease a large baking sheet.
  2. In a medium bowl, whisk together eggs, milk, salt, and pepper.
  3. Evenly scatter spinach, feta cheese, and optional cherry tomatoes over the prepared baking sheet.
  4. Pour the egg mixture over the vegetables and cheese.
  5. Bake for 18-22 minutes until eggs are set and lightly golden.
  6. Remove from oven, let cool, then slice and serve.

Notes

For extra flavor, add a pinch of red pepper flakes to the egg mixture. You can also customize by adding other vegetables like diced bell peppers or onions.
