  • 2 tablespoons crumbled feta cheese
  • 1 tablespoon milk dairy or non-dairy
  • 1/2 teaspoon olive oil or butter
  • Salt and freshly ground black pepper to taste
  • red pepper flakes a pinch, for a little kick (optional)

Method
 

Cooking Steps
  1. Whisk together eggs, milk, salt, and pepper in a medium bowl until well combined and slightly frothy.
  2. Heat olive oil or butter in a non-stick skillet over medium heat.
  3. Pour the egg mixture into the hot skillet and let it cook undisturbed for about 30 seconds until the edges begin to set.
  4. Using a spatula, gently push cooked portions from the edges towards the center, allowing uncooked egg to flow underneath; continue cooking and stirring gently for 2-3 minutes until mostly set but still moist.
  5. Stir in chopped spinach and crumbled feta cheese; cook for another 30 seconds to 1 minute until spinach is wilted and feta is slightly softened.
  6. Remove from heat, serve immediately, and garnish with red pepper flakes if desired.

Notes

For extra fluffiness, you can add a tiny splash of water or sparkling water to your egg mixture. Adjust the amount of feta to your taste; some prefer more, some less.
