Cooking Steps
- Whisk together eggs, milk, salt, and pepper in a medium bowl until well combined and slightly frothy.
- Heat olive oil or butter in a non-stick skillet over medium heat.
- Pour the egg mixture into the hot skillet and let it cook undisturbed for about 30 seconds until the edges begin to set.
- Using a spatula, gently push cooked portions from the edges towards the center, allowing uncooked egg to flow underneath; continue cooking and stirring gently for 2-3 minutes until mostly set but still moist.
- Stir in chopped spinach and crumbled feta cheese; cook for another 30 seconds to 1 minute until spinach is wilted and feta is slightly softened.
- Remove from heat, serve immediately, and garnish with red pepper flakes if desired.
Notes
For extra fluffiness, you can add a tiny splash of water or sparkling water to your egg mixture. Adjust the amount of feta to your taste; some prefer more, some less.
