- Cook Italian sausage in a large skillet over medium-high heat until no longer pink, breaking it apart, then drain excess grease.
- Transfer cooked sausage to a slow cooker and add onion, garlic, chicken broth, diced tomatoes, potatoes, oregano, thyme, red pepper flakes (if using), salt, and pepper.
- Stir ingredients, then cover and cook on low for 6-8 hours or high for 3-4 hours until potatoes are tender.
- About 30 minutes before serving, stir in the chopped kale and heavy cream or milk if desired. Cook until kale is wilted and tender.
- Adjust seasonings, then ladle into bowls and serve with Parmesan cheese if desired.
Notes
For a spicier soup, increase the amount of red pepper flakes. Leftovers can be stored in an airtight container in the refrigerator for up to 3-4 days.
