Hearty Slow Cooker Sausage and Kale Soup

  • 1 lb Italian sausage mild or hot, casing removed
  • 1 yellow onion chopped
  • 3 cloves garlic minced
  • 4 cups chicken broth
  • 1 diced tomatoes 14.5 oz can, undrained
  • 3 potatoes medium, peeled and diced (Yukon Gold or Russet)
  • 1 tsp dried oregano
  • ½ tsp dried thyme
  • ¼ tsp red pepper flakes optional
  • Salt to taste
  • Black pepper to taste
  • 4-5 cups fresh kale tough stems removed and roughly chopped
  • ½ cup heavy cream or milk optional
  • Parmesan cheese for serving (optional)

Method
 

Cooking
  1. Cook Italian sausage in a large skillet over medium-high heat until no longer pink, breaking it apart, then drain excess grease.
  2. Transfer cooked sausage to a slow cooker and add onion, garlic, chicken broth, diced tomatoes, potatoes, oregano, thyme, red pepper flakes (if using), salt, and pepper.
  3. Stir ingredients, then cover and cook on low for 6-8 hours or high for 3-4 hours until potatoes are tender.
  4. About 30 minutes before serving, stir in the chopped kale and heavy cream or milk if desired. Cook until kale is wilted and tender.
  5. Adjust seasonings, then ladle into bowls and serve with Parmesan cheese if desired.

Notes

For a spicier soup, increase the amount of red pepper flakes. Leftovers can be stored in an airtight container in the refrigerator for up to 3-4 days.
