  • 1 can (15-ounce) black beans rinsed and drained
  • 1 can (15-ounce) kidney beans rinsed and drained
  • 1 can (15-ounce) corn drained (or 1.5 cups frozen corn)
  • 1 can (28-ounce) crushed tomatoes
  • 1 can (10-ounce) Rotel diced tomatoes with green chilies undrained
  • 1 can (14.5-ounce) chicken broth
  • 1 packet (1 ounce) taco seasoning mix
  • 1 tsp cumin
  • 0.5 tsp chili powder
Garnish and Toppings (Optional)
  • 0.25 cup chopped fresh cilantro for garnish

Method
 

Preparation
  1. Place chicken at the bottom of the slow cooker and add all canned ingredients and chicken broth.
Seasoning
  1. Evenly sprinkle taco seasoning, cumin, and chili powder over the ingredients.
Cooking
  1. Cover and cook on LOW for 6-8 hours or HIGH for 3-4 hours until chicken is thoroughly cooked.
Finishing Touches
  1. Remove and shred the cooked chicken, then return it to the soup and stir.
  2. Ladle into bowls, garnish with desired toppings, and serve immediately with a lime wedge.

Notes

For a spicier soup, add a pinch of cayenne pepper or an extra 1/2 teaspoon of chili powder. You can easily adapt this recipe with various toppings to suit individual preferences. The soup also freezes well, making it great for meal prep.
