  • 1 cup frozen corn
  • 1 can diced tomatoes 14.5 ounce, undrained
  • 1 can tomato sauce 8 ounce
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • 1/4 teaspoon dried oregano
  • Salt and black pepper to taste
  • 1/2 cup shredded cheddar cheese for topping, optional
  • Fresh parsley chopped, for garnish, optional

Cooking Instructions
  1. Warm olive oil in a large skillet or Dutch oven over medium-high heat. Add ground turkey, breaking it up, and cook for 5-7 minutes until no longer pink; drain excess grease.
  2. Add chopped onion and cook for 3-4 minutes until softened. Stir in minced garlic and chopped bell pepper, cooking for another 2-3 minutes until slightly tender.
  3. Stir in frozen corn, undrained diced tomatoes, tomato sauce, chili powder, cumin, and oregano; mix well.
  4. Bring the mixture to a gentle simmer, then reduce heat to medium-low. Cover and cook for 10-15 minutes to meld flavors and tenderize vegetables.
  5. Season with salt and pepper to taste. If desired, sprinkle with shredded cheddar cheese, cover, and let melt for 1-2 minutes; garnish with fresh parsley.

Notes

For a spicier kick, add a pinch of red pepper flakes with the chili powder. This dish is also great served over rice or pasta. Feel free to substitute other vegetables like zucchini or spinach for variety.
