  • 1 lb lean ground beef (80/20 or 90/10)
  • 1 yellow onion finely chopped
  • 3 cloves garlic minced
  • 1 cup long-grain white rice rinsed
  • 2 cups beef broth
  • 1 can diced tomatoes (14.5 oz), undrained
  • 1 tbsp tomato paste
  • 1 tsp Worcestershire sauce
  • 1/2 tsp salt (or to taste)
  • 1/4 tsp black pepper (or to taste)
  • 1/2 tsp dried oregano (or Italian seasoning)
Optional & Garnish
  • 1/2 cup frozen peas or corn Optional
  • fresh parsley chopped, for garnish

Method
 

Cooking Steps
  1. Brown the ground beef in a large, oven-safe skillet over medium-high heat, then drain any excess fat.
  2. Add the chopped onion and cook until softened, then stir in the minced garlic and cook until fragrant.
  3. Stir in the rinsed rice, beef broth, undrained diced tomatoes, tomato paste, Worcestershire sauce, salt, pepper, and oregano.
  4. Bring the mixture to a boil, then reduce heat to low, cover tightly, and simmer for 15-20 minutes until rice is tender and liquid is absorbed.
  5. If using, stir in frozen peas or corn during the last 5 minutes of cooking.
  6. Remove from heat, let rest covered for 5 minutes to steam the rice, then fluff with a fork.
  7. Garnish with fresh parsley and serve hot.

Notes

For best results, use a heavy-bottomed skillet to prevent sticking. Adjust seasonings to your preference. This dish is great for meal prep!
