Cooking Instructions
- Heat olive oil in a large, oven-safe skillet over medium-high heat. Add ground beef and cook until browned, breaking it apart with a spoon.
- Drain excess fat from the skillet and set the cooked ground beef aside in a bowl.
- Return the skillet to medium heat, add chopped onion, and cook for 3-5 minutes until softened. Stir in minced garlic and cook for another minute until fragrant.
- Add diced sweet potatoes, dried thyme, smoked paprika, salt, and pepper to the skillet, stirring to coat.
- Pour in beef broth, bring to a simmer, then reduce heat to medium-low, cover, and cook for 10-15 minutes until sweet potatoes are tender.
- Add cooked ground beef back to the skillet with sweet potatoes and stir gently to heat through. Adjust seasonings if needed.
- Garnish with fresh chopped parsley if desired and serve hot.
Notes
For extra flavor, you can add a pinch of red pepper flakes with the spices. If you don't have an oven-safe skillet, you can transfer the mixture to an oven-safe dish after step 5 and continue cooking.
