  • 1 pound lean ground beef
  • 1 medium onion chopped
  • 2 cloves garlic minced
  • 2 medium sweet potatoes peeled and diced (about 3 cups)
  • 1 cup beef broth (or chicken broth)
  • 1 teaspoon dried thyme
  • 1/2 teaspoon smoked paprika
  • Salt to taste
  • Freshly ground black pepper to taste

  • Fresh parsley chopped (for garnish, optional)

Method
 

Cooking Instructions
  1. Heat olive oil in a large, oven-safe skillet over medium-high heat. Add ground beef and cook until browned, breaking it apart with a spoon.
  2. Drain excess fat from the skillet and set the cooked ground beef aside in a bowl.
  3. Return the skillet to medium heat, add chopped onion, and cook for 3-5 minutes until softened. Stir in minced garlic and cook for another minute until fragrant.
  4. Add diced sweet potatoes, dried thyme, smoked paprika, salt, and pepper to the skillet, stirring to coat.
  5. Pour in beef broth, bring to a simmer, then reduce heat to medium-low, cover, and cook for 10-15 minutes until sweet potatoes are tender.
  6. Add cooked ground beef back to the skillet with sweet potatoes and stir gently to heat through. Adjust seasonings if needed.
  7. Garnish with fresh chopped parsley if desired and serve hot.

Notes

For extra flavor, you can add a pinch of red pepper flakes with the spices. If you don't have an oven-safe skillet, you can transfer the mixture to an oven-safe dish after step 5 and continue cooking.
