Cooking Steps
  1. Heat olive oil in a large skillet over medium-high heat and brown the ground beef, breaking it apart, then drain any excess fat.
  2. Add the chopped onion to the skillet and sauté for 5-7 minutes until softened.

  4. Add the diced potatoes, beef broth, undrained diced tomatoes, dried thyme, and black pepper to the skillet, stirring to combine.
  5. Bring to a simmer, then reduce heat to medium-low, cover, and cook for 15-20 minutes until potatoes are tender, stirring occasionally.
  6. Season with salt to taste.
  7. Remove from heat, garnish with fresh chopped parsley, and serve warm.

For an extra layer of flavor, consider adding a pinch of red pepper flakes with the garlic. The cooking time for potatoes may vary based on their size and type; ensure they are fork-tender before serving.
