Preparation
- Preheat your oven to 375°F (190°C) and lightly grease a 9x13 inch baking dish.
- Toss the diced potatoes with olive oil, salt, and pepper, then microwave them for 5-7 minutes until slightly tender, or roast them for 15-20 minutes until fork-tender.
Cooking
- In a large skillet, cook the breakfast sausage until browned and crumbled; drain excess fat and set aside.
- Sauté the diced onion and bell pepper in the same skillet for 5-7 minutes until softened.
- Evenly spread the par-cooked potatoes in the baking dish, then layer with cooked sausage, sautéed onions, and bell peppers.
- In a large bowl, whisk together eggs, milk, salt, and pepper until well combined.
- Sprinkle half of the cheddar cheese over the ingredients, gently pour the egg mixture over everything, and top with the remaining cheese.
Baking & Serving
- Bake for 30-40 minutes until the eggs are set and the top is golden brown.
- Let the breakfast bake rest for 5-10 minutes before slicing and serving. Optionally garnish with fresh chives or parsley, or red pepper flakes.
Notes
For extra flavor, consider adding a pinch of garlic powder or paprika to the potatoes. If you prefer a milder flavor, use sweet Italian sausage instead of breakfast sausage.
