Hearty Cheesy Sausage and Potato Breakfast Bake

  • 2-3 medium-sized Yukon Gold or red potatoes diced
  • 1 lb breakfast sausage cooked and crumbled
  • 8 large eggs
  • 1/2 cup milk any kind
  • 1 cup shredded cheddar cheese
  • 1/2 small onion finely diced
  • 1/2 bell pepper any color, diced
  • Salt to taste
  • Black pepper to taste
  • 1 tablespoon olive oil for potatoes

  • Fresh chives or parsley
  • red pepper flakes

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C) and lightly grease a 9x13 inch baking dish.
  2. Toss the diced potatoes with olive oil, salt, and pepper, then microwave them for 5-7 minutes until slightly tender, or roast them for 15-20 minutes until fork-tender.
Cooking
  1. In a large skillet, cook the breakfast sausage until browned and crumbled; drain excess fat and set aside.
  2. Sauté the diced onion and bell pepper in the same skillet for 5-7 minutes until softened.
  3. Evenly spread the par-cooked potatoes in the baking dish, then layer with cooked sausage, sautéed onions, and bell peppers.
  4. In a large bowl, whisk together eggs, milk, salt, and pepper until well combined.
  5. Sprinkle half of the cheddar cheese over the ingredients, gently pour the egg mixture over everything, and top with the remaining cheese.
Baking & Serving
  1. Bake for 30-40 minutes until the eggs are set and the top is golden brown.
  2. Let the breakfast bake rest for 5-10 minutes before slicing and serving. Optionally garnish with fresh chives or parsley, or red pepper flakes.

Notes

For extra flavor, consider adding a pinch of garlic powder or paprika to the potatoes. If you prefer a milder flavor, use sweet Italian sausage instead of breakfast sausage.
