Grandma's Classic Meatloaf for Two

Ingredients
  

Meatloaf
  • 1 pound Ground Beef 80/20 lean
  • 1 Egg large
  • 1/4 cup Breadcrumbs plain or panko
  • 2 tablespoons Milk
  • 1/4 cup Onion finely chopped
  • 1 Garlic clove, minced
  • 1 teaspoon Worcestershire Sauce
  • 1/2 teaspoon Salt
  • 1/4 teaspoon Black Pepper
Glaze
  • 1/4 cup Ketchup
  • 1 tablespoon Brown Sugar
  • 1 teaspoon Dijon Mustard
  • 1/2 teaspoon Apple Cider Vinegar optional

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and prepare a baking sheet or loaf pan with parchment paper.
  2. In a medium bowl, whisk the egg, milk, and Worcestershire sauce.
  3. Sauté the chopped onion and minced garlic in a small pan until softened, then let them cool slightly.
Assemble & Bake
  1. Combine ground beef, breadcrumbs, salt, pepper, sautéed vegetables, and the egg mixture in a large bowl, mixing gently until just combined.
  2. Form the meat mixture into a compact loaf on the prepared baking sheet or in the loaf pan.
  3. Whisk together ketchup, brown sugar, Dijon mustard, and optional apple cider vinegar for the glaze.
  4. Spoon half of the glaze over the meatloaf and bake for 30 minutes.
  5. Remove the meatloaf, spread the remaining glaze, and bake for another 15-20 minutes, or until it reaches an internal temperature of 160°F (71°C).
Rest & Serve
  1. Allow the meatloaf to rest for 5-10 minutes after baking before slicing and serving.

Notes

For best results, avoid overmixing the meatloaf mixture to ensure a tender texture. A meat thermometer is highly recommended to ensure the meatloaf is cooked to a safe internal temperature.
