Gourmet Maple Pecan Brie Sweet Potatoes

Ingredients
  

Sweet Potatoes
  • 2 large or 3-4 medium Sweet Potatoes peeled and diced into 1-inch cubes
Dairy and Cheese
  • 4-6 ounces Brie Cheese rind on or off, sliced or dolloped
  • 1 tablespoon Butter unsalted (divided: 0.5 tbsp for sweet potatoes, 0.5 tbsp for pecans)
Pecans and Syrup
  • 1 cup Pecan Halves or Pieces
  • 2 tablespoons Maple Syrup 100% pure
Seasoning
  • 1 tablespoon Olive Oil
  • Salt To taste
  • Black Pepper To taste
  • 1 teaspoon Fresh Rosemary or Thyme finely chopped (optional)

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. Toss diced sweet potatoes with olive oil, 1/2 tablespoon melted butter, salt, and pepper in a large bowl. Spread them on a baking sheet.
Cooking
  1. Roast sweet potatoes for 20-25 minutes, flipping halfway, until tender and caramelized.
  2. While sweet potatoes roast, melt remaining butter in a skillet, add pecans, and toast for 2-3 minutes until fragrant.
  3. Pour in maple syrup, stir to coat pecans, and cook for 1-2 minutes until syrup thickens.
  4. Remove roasted sweet potatoes from the oven and arrange brie slices over them.
  5. Return to the oven for 5-7 minutes, or until the brie is melted and bubbly.
  6. Remove from oven, sprinkle with maple pecans and optional fresh rosemary or thyme. Serve.

Notes

For an extra touch of flavor, toast the pecans lightly before adding them to the maple syrup. Adjust sweetness to your preference by adding more or less maple syrup.
