  • 1 sheet pre-made flatbread (naan, pita, or similar)
  • 4 oz brie cheese sliced or crumbled
  • 1/2 cup fresh or frozen cranberries
  • 1 tbsp olive oil
Optional Garnishes
  • fresh rosemary or thyme
  • 1 tbsp honey or maple syrup
  • 1 tbsp chopped pecans or walnuts

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C) and lightly brush both sides of the flatbread with olive oil.
  2. Place the oiled flatbread on an oven rack or baking sheet and bake for 5-7 minutes, until golden and slightly crispy.
Assembly and Final Bake
  1. Remove the flatbread from the oven, arrange brie cheese evenly, and scatter cranberries generously over the brie.
  2. Return the flatbread to the oven for another 5-8 minutes, until the brie is melted and bubbly, and cranberries begin to soften.
Finishing Touches
  1. Garnish with fresh rosemary or thyme and, if desired, a drizzle of honey or maple syrup.
  2. Let cool for a minute or two before slicing and serving.

Notes

Keep a close eye on the flatbread while baking as cooking times can vary significantly. For best results, use fresh cranberries when in season for a brighter flavor. This flatbread is also delicious with a sprinkle of crushed red pepper flakes for a hint of heat.
