  • 2 medium zucchini
  • 2 tablespoons olive oil
  • 2 cloves garlic minced
  • ½ cup shredded mozzarella cheese
  • ¼ cup grated Parmesan cheese
  • 1 tablespoon fresh parsley chopped
  • Salt to taste
  • Freshly ground black pepper to taste

Method
 

Preparation
  1. Wash and trim the zucchini, then slice each lengthwise into ½-inch thick "steaks."
  2. Lightly brush both sides of the zucchini steaks with 1 tablespoon of olive oil, and season generously with salt and black pepper.
Cooking
  1. Heat the remaining 1 tablespoon of olive oil in a large skillet or grill pan over medium-high heat.
  2. Cook the zucchini steaks for 3-4 minutes per side until tender-crisp and nicely browned, then remove from heat and arrange on a baking sheet.
Topping & Finishing
  1. Combine minced garlic, shredded mozzarella, grated Parmesan, chopped fresh parsley, and red pepper flakes (if using) in a small bowl.
  2. Evenly sprinkle the cheese topping over the cooked zucchini steaks.
  3. Place the baking sheet back into the oven or under the broiler for 3-5 minutes until the cheese is melted and lightly golden brown.
  4. Garnish with additional fresh parsley if desired and serve immediately.

Notes

For extra flavor, you can add a squeeze of lemon juice after broiling. Adjust cooking time based on the thickness of your zucchini slices and desired tenderness. Watch carefully while broiling to prevent burning the cheese.
