Fruity Cream Cheese & Berry Quesadilla

  • 1 small flour tortilla
  • 2 tablespoons cream cheese, softened
  • 1/4 cup mixed berries (fresh or thawed frozen), slightly mashed
  • 1/2 teaspoon honey or maple syrup optional
  • Cooking spray or butter for skillet

Method
 

Instructions
  1. Warm a small non-stick skillet over medium-low heat and coat with cooking spray or a tiny pat of butter.
  2. Lay the tortilla in the warm skillet.
  3. Spread the softened cream cheese evenly over one half of the tortilla.
  4. Spoon the slightly mashed berries over the cream cheese and drizzle with honey or maple syrup if desired.
  5. Fold the other half of the tortilla over the filling to create a half-moon shape.
  6. Cook for 1-2 minutes per side until the tortilla is lightly golden and the cream cheese is warm and melty.
  7. Carefully remove from the skillet, slice in half (if desired), and enjoy immediately.

Notes

Adjust the amount of honey or maple syrup to your sweetness preference. For extra flavor, you can add a pinch of cinnamon to the berries.
