Preparation
- Whisk together eggs, milk, salt, and pepper in a small bowl until well combined and frothy.
Cooking
- Heat olive oil or butter in a non-stick pan over medium heat.
- Add chopped spinach to the pan and cook for 1-2 minutes until wilted.
- Pour the whisked egg mixture over the spinach.
- Gently push eggs from the edges to the center with a spatula as they set, allowing uncooked egg to flow underneath.
- When eggs are mostly set but still slightly moist, sprinkle in the crumbled feta cheese.
- Continue to cook for 30 seconds to 1 minute until cheese is warmed and eggs are cooked to your desired consistency.
Serving
- Serve immediately, optionally with whole-wheat toast or sliced avocado.
Notes
For extra fluffiness, make sure to whisk the eggs thoroughly until they are frothy. Adjust the cooking time for your preferred egg consistency – some like them softer, others firmer.
