  • 2 large eggs
  • 2 tablespoons milk
  • 1 cup fresh spinach, roughly chopped
  • 1/4 cup crumbled feta cheese
  • 1 teaspoon olive oil or butter
  • Salt and black pepper to taste

  • whole-wheat toast or a quarter of an avocado

Method
 

Preparation
  1. Whisk together eggs, milk, salt, and pepper in a small bowl until well combined and frothy.
Cooking
  1. Heat olive oil or butter in a non-stick pan over medium heat.
  2. Add chopped spinach to the pan and cook for 1-2 minutes until wilted.
  3. Pour the whisked egg mixture over the spinach.
  4. Gently push eggs from the edges to the center with a spatula as they set, allowing uncooked egg to flow underneath.
  5. When eggs are mostly set but still slightly moist, sprinkle in the crumbled feta cheese.
  6. Continue to cook for 30 seconds to 1 minute until cheese is warmed and eggs are cooked to your desired consistency.
Serving
  1. Serve immediately, optionally with whole-wheat toast or sliced avocado.

Notes

For extra fluffiness, make sure to whisk the eggs thoroughly until they are frothy. Adjust the cooking time for your preferred egg consistency – some like them softer, others firmer.
