Preparation
- In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt until well combined.
- In a separate medium bowl, whisk together the buttermilk, egg, melted butter, and vanilla extract until blended.
- Pour the wet ingredients into the dry ingredients and stir gently until just combined; do not overmix, as lumps are acceptable.
Cooking
- Heat a lightly oiled or buttered griddle or non-stick skillet over medium heat.
- Pour about ΒΌ cup of batter per pancake onto the hot griddle.
- Cook for 2-3 minutes per side until bubbles appear and edges set; flip and cook for another 1-2 minutes until golden brown and cooked through.

Notes
