Ingredients
  

Dry Ingredients
  • 1.5 cups all-purpose flour
  • 2 tablespoons granulated sugar
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 0.5 teaspoon salt
Wet Ingredients
  • 1.25 cups buttermilk
  • 1 large egg
  • 0.25 cup unsalted butter melted (or vegetable oil)
  • 1 teaspoon vanilla extract

Method
 

Preparation
  1. In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt until well combined.
  2. In a separate medium bowl, whisk together the buttermilk, egg, melted butter, and vanilla extract until blended.
  3. Pour the wet ingredients into the dry ingredients and stir gently until just combined; do not overmix, as lumps are acceptable.
Cooking
  1. Heat a lightly oiled or buttered griddle or non-stick skillet over medium heat.
  2. Pour about ΒΌ cup of batter per pancake onto the hot griddle.
  3. Cook for 2-3 minutes per side until bubbles appear and edges set; flip and cook for another 1-2 minutes until golden brown and cooked through.
  4. Transfer cooked pancakes to a plate and serve warm with your favorite toppings.

Notes

For extra fluffy pancakes, let the batter rest for 5-10 minutes before cooking. Adjust the amount of butter or oil for cooking to your preference.
