Ingredients
  

Herb-Roasted Turkey Breast
  • 3-4 lbs bone-in or boneless turkey breast
  • 2 tbsp olive oil
  • 1 tbsp fresh rosemary chopped
  • 1 tbsp fresh thyme chopped
  • 1 tsp garlic powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
Cranberry-Orange Glaze
  • 1 cup fresh or frozen cranberries
  • 1/2 cup orange juice
  • 1/4 cup brown sugar
  • 1 tbsp cornstarch mixed with 1 tbsp cold water to create a slurry
  • Orange zest from 1/2 an orange for garnish (optional)

Method
 

Roasting the Turkey
  1. Preheat your oven to 375°F (190°C).
  2. In a small bowl, combine olive oil, fresh rosemary, fresh thyme, garlic powder, salt, and black pepper; mix well.
  3. Pat the turkey breast dry, place it in a roasting pan, and rub the herb and oil mixture evenly all over.
  4. Roast for 60-90 minutes, or until the internal temperature reaches 165°F (74°C).
Preparing the Glaze
  1. While the turkey roasts, combine cranberries, orange juice, and brown sugar in a saucepan and simmer until cranberries burst (5-7 minutes).
  2. Stir in the cornstarch slurry and cook for 1-2 minutes until the glaze thickens, then remove from heat.
Finishing Touches
  1. Once cooked, remove turkey, tent with foil, and let rest for 10-15 minutes before carving.
  2. Slice the turkey breast, serve with the warm cranberry-orange glaze, and garnish with orange zest if desired.

Notes

For even cooking, bring the turkey breast to room temperature before roasting. If you don't have fresh herbs, you can substitute 1/2 tablespoon of dried rosemary and 1/2 tablespoon of dried thyme, but fresh is always recommended for the best flavor.
