Ingredients

Crust
  • 1 large pre-baked circular sugar cookie or shortbread crust store-bought or homemade
Cream Cheese Frosting
  • 1 cup cream cheese softened
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
Fruit & Garnish
  • 1 kiwi peeled and sliced into rounds
  • 1 cup strawberries hulled and sliced
  • 1/2 cup raspberries
  • 1/2 cup blueberries
  • Edible silver or gold pearls for decoration

Equipment

  • electric mixer
  • medium bowl

Method

Preparation
  1. Ensure your chosen crust is completely cooled before proceeding. In a medium bowl, combine softened cream cheese, powdered sugar, and vanilla extract, then beat with an electric mixer until smooth and creamy.
Assembly
  1. Evenly spread the cream cheese frosting over the cooled crust, opting to leave a small border if desired. Arrange the sliced kiwi rounds around the outer edge of the frosting in a circular pattern, with slight overlaps to create a wreath effect.
  2. Arrange the sliced strawberries in a circular pattern just inside the kiwi ring, then fill in any center gaps with raspberries and blueberries, distributing them evenly to mimic berries on a wreath.
  3. Sprinkle edible silver or gold pearls over the fruit and frosting for enhanced sparkle and visual appeal.
Serving
  1. Serve the fruit pizza immediately or refrigerate until you are ready; it is best enjoyed the day it is prepared.

Notes

For best results and flavor, use fresh, ripe fruit and chill thoroughly before serving if not eaten immediately.
