  • 2 tbsp olive oil
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 tbsp fresh rosemary
  • 1/4 cup dried cranberries
  • 2 tbsp maple syrup

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, toss diced sweet potatoes with olive oil, salt, pepper, and chopped rosemary until evenly coated.
  3. Spread the seasoned sweet potatoes on a baking sheet in a single layer.
  4. Roast for 20-25 minutes, flipping halfway, until tender and lightly caramelized. Add dried cranberries for the last 5 minutes.
  5. Remove from oven and drizzle with maple syrup, then toss gently to combine and serve warm.

Notes

For extra crispiness, ensure the sweet potatoes are in a single layer and not overcrowded on the baking sheet to allow for even roasting.
