Preparation
- Preheat your oven to 400°F (200°C).
- In a large bowl, toss diced sweet potatoes with olive oil, salt, pepper, and chopped rosemary until evenly coated.
- Spread the seasoned sweet potatoes on a baking sheet in a single layer.
- Roast for 20-25 minutes, flipping halfway, until tender and lightly caramelized. Add dried cranberries for the last 5 minutes.
- Remove from oven and drizzle with maple syrup, then toss gently to combine and serve warm.
