Fast Prep Classic Comfort Meatloaf

Ingredients
  

Meatloaf
  • 1.5 lbs lean ground beef 80/20 recommended
  • 1 cup seasoned breadcrumbs
  • 1/2 cup milk
  • 1 large egg lightly beaten
  • 1/2 cup finely chopped onion or 2 tbsp dried onion flakes
  • 1/4 cup ketchup plus extra for topping
  • 1 tbsp Worcestershire sauce
  • 1 tsp garlic powder
  • 1/2 tsp dried oregano
  • Salt and black pepper to taste

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and lightly grease a loaf pan or line a baking sheet with parchment paper.
  2. In a large mixing bowl, combine all the ingredients for the meatloaf: ground beef, breadcrumbs, milk, egg, onion, 1/4 cup ketchup, Worcestershire sauce, garlic powder, oregano, salt, and pepper.
  3. Mix the ingredients together using your hands until just combined, being careful not to overmix.
  4. Transfer the mixture to the prepared loaf pan and gently shape it into a loaf, or form a free-form loaf if using a baking sheet.
  5. Spread a thin layer of extra ketchup (about 2-3 tablespoons) over the top of the meatloaf.
Baking
  1. Bake for 55-60 minutes, or until the internal temperature reaches 160°F (71°C) when checked with an instant-read thermometer.
  2. Remove the meatloaf from the oven and let it rest for 5-10 minutes before slicing and serving.

Notes

For best results, do not overmix the meatloaf mixture, as this can lead to a tough texture. Letting the meatloaf rest after baking helps the juices redistribute, resulting in a more tender and flavorful outcome.
