Ingredients

Coleslaw
  • 1 medium head green cabbage (about 2 lbs), finely shredded
  • 1/4 cup shredded carrots (from about 1 medium carrot)
Dressing
  • 1/2 cup mayonnaise
  • 1/3 cup granulated sugar
  • 1/4 cup whole milk
  • 1/4 cup buttermilk
  • 2 1/2 tablespoons white vinegar
  • 1 1/2 tablespoons lemon juice
  • 1/2 teaspoon salt
  • 1/8 teaspoon black pepper

Equipment

  • Food processor
  • Mandoline
  • Large mixing bowl
  • Medium bowl
  • Whisk
  • Sturdy spoon
  • Plastic wrap

Method

Preparation
  1. Finely shred the cabbage and carrot using a food processor, mandoline, or sharp knife, aiming for a nearly minced consistency.
  2. Combine the shredded cabbage and carrots in a large mixing bowl.
Make the Dressing
  1. In a separate medium bowl, whisk together mayonnaise, sugar, whole milk, buttermilk, white vinegar, lemon juice, salt, and pepper until smooth and the sugar is dissolved.
  2. Taste and adjust seasoning as needed, adding more salt or lemon juice to brighten the flavor.
Combine and Chill
  1. Pour the dressing over the shredded cabbage and carrots, then toss thoroughly with a sturdy spoon or clean hands until all vegetables are completely coated.
  2. Cover the bowl tightly and refrigerate for at least 2 hours, or preferably 4-6 hours, to allow flavors to deepen and cabbage to soften.
  3. Stir well before serving to redistribute any settled dressing.

Notes

For the best results, ensure your cabbage and carrots are very finely shredded. The extended chilling time is crucial for developing the authentic KFC coleslaw flavor and texture, allowing the cabbage to tenderize in the dressing.
