  • 1.5 to 2 pounds Salmon Fillets skin on or off, divided into 4-6 ounce portions.
  • 2-3 medium-sized Lemons thinly sliced.
  • small bunch Fresh Dill finely chopped.
  • small bunch Fresh Parsley finely chopped.
  • 2 tablespoons Olive Oil good quality extra virgin.
  • 1 teaspoon Garlic Powder or 2-3 cloves fresh minced garlic).
  • Salt To taste (a good generous pinch or two).
  • Black Pepper Freshly ground, to taste.

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Pat the salmon fillets dry, place them on the baking sheet, drizzle with olive oil, then season with garlic powder, salt, and black pepper.
Cooking
  1. Arrange lemon slices and scatter chopped dill and parsley over the salmon fillets.
  2. Bake for 12-18 minutes, or until the salmon flakes easily and reaches an internal temperature of 145°F (63°C).
Serving
  1. Carefully transfer the cooked salmon to serving plates, garnishing with extra lemon wedges and herbs if desired.

Notes

For extra flavor, marinate the salmon in lemon juice and herbs for 15-20 minutes before baking.
