- Lightly grease the slow cooker or line it with a liner, then place chicken breasts or thighs in an even layer.
- Sprinkle taco seasoning generously over the chicken, and add chopped onion and bell pepper around it if using.
- Pour salsa and chicken broth over the seasoned chicken, then cover and cook on LOW for 4-6 hours or HIGH for 2-3 hours until tender.
- Once cooked, use two forks to shred the chicken directly in the slow cooker with the cooking liquid.
- Scoop the shredded chicken into warm tortillas and top with your favorite taco fixings.
Notes
For extra flavor, you can sear the chicken breasts in a pan for a few minutes before adding them to the slow cooker to develop a nice crust. Adjust the amount of taco seasoning to your preference, and feel free to experiment with different types of salsa for varying heat levels and flavors.
