  • 2 lbs boneless, skinless chicken breasts or thighs
  • 1 packet taco seasoning blend (about 1 ounce) or 2 tablespoons
  • 1 cup salsa (mild, medium, or hot)
  • 1/2 cup chicken broth (or water)
  • 1 onion Optional: chopped
  • 1 bell pepper chopped
For Serving
  • Tortillas (corn or flour)
  • shredded lettuce

  • cilantro
  • lime wedges

Method
 

Instructions
  1. Lightly grease the slow cooker or line it with a liner, then place chicken breasts or thighs in an even layer.
  2. Sprinkle taco seasoning generously over the chicken, and add chopped onion and bell pepper around it if using.
  3. Pour salsa and chicken broth over the seasoned chicken, then cover and cook on LOW for 4-6 hours or HIGH for 2-3 hours until tender.
  4. Once cooked, use two forks to shred the chicken directly in the slow cooker with the cooking liquid.
  5. Scoop the shredded chicken into warm tortillas and top with your favorite taco fixings.

Notes

For extra flavor, you can sear the chicken breasts in a pan for a few minutes before adding them to the slow cooker to develop a nice crust. Adjust the amount of taco seasoning to your preference, and feel free to experiment with different types of salsa for varying heat levels and flavors.
