Cooking Steps
- Preheat oven to 350°F (175°C) and lightly grease a loaf pan or line a baking sheet with parchment paper.
- In a large bowl, gently combine ground beef, egg, breadcrumbs, 2 tablespoons ketchup, onion powder, garlic powder, salt, and pepper; do not overmix.
- Transfer the meat mixture to the prepared loaf pan and press evenly, or shape into a rectangular loaf on the baking sheet.
- In a small bowl, whisk together the remaining ketchup (about ¼ cup), and optionally, Worcestershire sauce and brown sugar for the glaze.
- Spread half of the prepared glaze evenly over the top and sides of the meatloaf.
- Bake for 30 minutes.
- Remove the meatloaf, spread the remaining glaze, and bake for another 25-35 minutes until the internal temperature reaches 160°F (71°C) and the glaze is caramelized.
- Let the meatloaf rest in the pan for 10-15 minutes after cooking to allow juices to redistribute.
- Slice and serve hot.
