Method

Cooking Steps
  1. Preheat oven to 350°F (175°C) and lightly grease a loaf pan or line a baking sheet with parchment paper.
  2. In a large bowl, gently combine ground beef, egg, breadcrumbs, 2 tablespoons ketchup, onion powder, garlic powder, salt, and pepper; do not overmix.
  3. Transfer the meat mixture to the prepared loaf pan and press evenly, or shape into a rectangular loaf on the baking sheet.
  4. In a small bowl, whisk together the remaining ketchup (about ¼ cup), and optionally, Worcestershire sauce and brown sugar for the glaze.
  5. Spread half of the prepared glaze evenly over the top and sides of the meatloaf.
  6. Bake for 30 minutes.
  7. Remove the meatloaf, spread the remaining glaze, and bake for another 25-35 minutes until the internal temperature reaches 160°F (71°C) and the glaze is caramelized.
  8. Let the meatloaf rest in the pan for 10-15 minutes after cooking to allow juices to redistribute.
  9. Slice and serve hot.

Notes

For best results, avoid overmixing the meatloaf mixture to ensure a tender texture. Resting the meatloaf after baking is crucial for a moist and flavorful result.
