  • 1.5 lbs 80/20 ground beef
  • 2 large eggs
  • 1/2 cup plain or panko breadcrumbs
  • 1/4 cup whole milk
  • 1 small onion finely diced
  • 2 cloves garlic minced
  • 1/2 cup ketchup divided
  • 2 tablespoons brown sugar
  • 1 tablespoon Dijon mustard
  • 1 teaspoon Worcestershire sauce
  • Salt to taste
  • Black pepper to taste

Method
 

Instructions
  1. Preheat your oven to 350°F (175°C) and prepare your baking pan by greasing it or lining it with parchment paper.
  2. In a large bowl, combine the eggs, milk, and 1/4 cup of the ketchup.
  3. Stir in the diced onion, minced garlic, breadcrumbs, Worcestershire sauce, salt, and pepper into the wet mixture.
  4. Add the ground beef to the bowl and gently mix all ingredients until just combined.
  5. Transfer the meat mixture to the prepared loaf pan or shape it into a free-form loaf on the baking sheet.
  6. In a small bowl, whisk together the remaining 1/4 cup ketchup, brown sugar, and Dijon mustard for the glaze.
  7. Spread about half of the glaze evenly over the top of the meatloaf and bake for 30 minutes.
  8. Remove from the oven, spread the remaining glaze, and continue baking for another 25-35 minutes until the internal temperature reaches 160°F (71°C).
  9. Let the meatloaf rest for 10-15 minutes before slicing and serving.

Notes

For best results, do not overmix the meatloaf mixture to ensure a tender texture. Resting the meatloaf after baking is crucial for juicy slices.
