  • 1 ½ cups all-purpose flour
  • 1 cup granulated sugar
  • 2 teaspoons pumpkin pie spice
  • 1 teaspoon baking soda
  • ½ teaspoon baking powder
  • ¼ teaspoon salt
Wet Ingredients
  • 1 cup canned pumpkin puree (100% pumpkin, not pie filling)
  • 2 large eggs
  • ½ cup vegetable oil
  • 1 teaspoon vanilla extract

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C), then grease and flour a 9x5 inch loaf pan or line it with parchment paper.
  2. In a large bowl, whisk together the flour, sugar, pumpkin pie spice, baking soda, baking powder, and salt until they are well combined.
Mixing and Baking
  1. In a separate medium bowl, whisk together the pumpkin puree, eggs, vegetable oil, and vanilla extract until smooth.
  2. Pour the wet ingredients into the dry ingredients and mix with a spatula or wooden spoon until just combined, being careful not to overmix.
  3. Pour the batter into the prepared loaf pan and bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
  4. Let the bread cool in the pan for 10-15 minutes before transferring it to a wire rack to cool completely.

Notes

For an extra touch, you can add a handful of chopped walnuts or pecans to the batter.
