Preparation
- Preheat your oven to 350°F (175°C), then grease and flour a 9x5 inch loaf pan or line it with parchment paper.
- In a large bowl, whisk together the flour, sugar, pumpkin pie spice, baking soda, baking powder, and salt until they are well combined.
Mixing and Baking
- In a separate medium bowl, whisk together the pumpkin puree, eggs, vegetable oil, and vanilla extract until smooth.
- Pour the wet ingredients into the dry ingredients and mix with a spatula or wooden spoon until just combined, being careful not to overmix.
- Pour the batter into the prepared loaf pan and bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
- Let the bread cool in the pan for 10-15 minutes before transferring it to a wire rack to cool completely.
Notes
For an extra touch, you can add a handful of chopped walnuts or pecans to the batter.
