  • 1 cup vegetable or chicken broth
  • 1 teaspoon dried oregano
  • 1/2 teaspoon red pepper flakes optional
  • Salt to taste
  • Freshly ground black pepper to taste
  • 2 tablespoons fresh parsley or cilantro, chopped
  • Cooked rice, pasta, or crusty bread for serving

Preparation
  1. Peel and devein the shrimp, then chop the onion and mince the garlic.
  2. Heat olive oil in a large skillet over medium heat and sauté the chopped onion until translucent, about 3-5 minutes.
  3. Stir in minced garlic and cook for one minute until fragrant, making sure not to burn it.
Cooking
  1. Pour in undrained diced tomatoes and broth, then stir in oregano and red pepper flakes.
  2. Bring to a gentle simmer, then reduce heat, cover, and simmer for 5-7 minutes to meld flavors.
  3. Season with salt and pepper to taste, then add shrimp to the simmering sauce and cook for 2-4 minutes until pink and opaque.
  4. Remove from heat, stir in fresh parsley or cilantro, and serve immediately with rice, pasta, or crusty bread.

Notes

To enhance the flavor, consider adding a splash of white wine with the broth. Use fresh herbs for the best taste and aroma.
