Ingredients
  

Meatloaf
  • 1 ½ pounds ground beef 80/20 works best for flavor and moisture
  • 1 small onion finely chopped
  • 1 bell pepper any color, finely chopped
  • ½ cup breadcrumbs panko or regular
  • ½ cup milk
  • 1 large egg
  • 2 cloves garlic minced
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried Italian seasoning
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
Glaze
  • ½ cup ketchup
  • 2 tablespoons brown sugar
  • 1 tablespoon apple cider vinegar
  • ½ teaspoon Dijon mustard

Method
 

Preparation
  1. In a large bowl, combine all meatloaf ingredients and gently mix them together by hand until just combined, being careful not to overmix.
  2. Lightly grease a baking sheet or line it with parchment paper, then transfer the meat mixture and shape it into an oblong loaf (about 9x5 inches).
Glaze and Cook
  1. Whisk together the ketchup, brown sugar, apple cider vinegar, and Dijon mustard in a small bowl until smooth.
  2. Preheat your oven to 350°F (175°C) and bake the meatloaf for 30 minutes.
  3. Remove the meatloaf, spread the glaze over it, and continue baking for another 25-35 minutes until the internal temperature reaches 160°F (71°C).
Rest and Serve
  1. After baking, let the meatloaf rest for 10-15 minutes before slicing to ensure it remains juicy.

Notes

For extra flavor, consider adding a pinch of red pepper flakes to the glaze. Serving with mashed potatoes or roasted vegetables completes this comforting meal. Make sure your ground beef is at room temperature before mixing to ensure even cooking.
