  • 1.5 - 2 pounds boneless, skinless chicken thighs or breasts
  • 2-3 large/medium Sweet potatoes peeled and cut into 1-inch cubes
  • 1 cup BBQ sauce
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • 0.5 teaspoon onion powder
  • Salt and black pepper to taste

Method
 

Preheat & Prep
  1. Preheat your oven to 400°F (200°C) and line a large baking sheet with parchment paper for easy cleanup.
Sweet Potato Seasoning
  1. Combine cubed sweet potatoes with olive oil, garlic powder, smoked paprika, onion powder, salt, and pepper in a large bowl. Toss well and spread them on one half of the prepared baking sheet.
Chicken & Sauce
  1. In the same bowl, add chicken pieces and BBQ sauce, tossing until fully coated. Arrange the chicken on the other half of the baking sheet, ensuring it is not crowded.
Bake
  1. Bake for 25-35 minutes until the chicken is cooked through and sweet potatoes are tender. Gently toss the sweet potatoes halfway through for even browning.
Rest & Serve
  1. Remove from oven, let the chicken rest for a few minutes, then slice if using breasts. Garnish with fresh herbs and serve immediately.

Notes

For an extra kick, add a pinch of cayenne pepper to the sweet potato seasoning. You can also customize the BBQ sauce with a dash of liquid smoke for more intense flavor. Ensure the chicken is in a single layer to cook evenly and reach optimal tenderness.
