  • 1.5-2 pounds boneless, skinless chicken thighs or breasts
  • 1.5 pounds small, waxy potatoes (Yukon Golds, red, or new potatoes) cut into 1-inch pieces
  • 2-3 juicy lemons zest and juice
  • 4-6 cloves garlic minced
  • 1/4 cup extra virgin olive oil
  • 1 tablespoon dried oregano (or a blend of oregano, thyme, Italian seasoning)
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • Fresh parsley or dill chopped, for garnish (Optional)

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C) and lightly grease a 9x13 inch baking dish.
  2. Cut chicken breasts into 1-inch pieces if using, and wash and chop potatoes into approximately 1-inch chunks for even cooking.
Making the Lemon Garlic Sauce
  1. In a small bowl, whisk together olive oil, lemon juice, lemon zest, minced garlic, dried oregano, salt, and black pepper to create the flavorful sauce.
Combine Ingredients and Bake
  1. Place the chopped chicken and potatoes in the prepared baking dish, then pour the lemon-garlic sauce over everything and toss to ensure even coating before spreading them in a single layer.
  2. Bake for 30-40 minutes until chicken is cooked through (165°F / 74°C internal temperature) and potatoes are tender and golden, stirring halfway for best results.
Serve
  1. Allow the dish to rest for a few minutes after baking, then garnish with fresh parsley or dill if desired, and serve hot.

Notes

For an extra burst of flavor, add a pinch of red pepper flakes to the sauce. This recipe is also great for meal prep; simply divide into containers after cooking.
