Preparation
- Preheat your oven to 400°F (200°C) and lightly grease a 9x13 inch baking dish.
- Cut chicken breasts into 1-inch pieces if using, and wash and chop potatoes into approximately 1-inch chunks for even cooking.
Making the Lemon Garlic Sauce
- In a small bowl, whisk together olive oil, lemon juice, lemon zest, minced garlic, dried oregano, salt, and black pepper to create the flavorful sauce.
Combine Ingredients and Bake
- Place the chopped chicken and potatoes in the prepared baking dish, then pour the lemon-garlic sauce over everything and toss to ensure even coating before spreading them in a single layer.
- Bake for 30-40 minutes until chicken is cooked through (165°F / 74°C internal temperature) and potatoes are tender and golden, stirring halfway for best results.
Serve
- Allow the dish to rest for a few minutes after baking, then garnish with fresh parsley or dill if desired, and serve hot.
Notes
For an extra burst of flavor, add a pinch of red pepper flakes to the sauce. This recipe is also great for meal prep; simply divide into containers after cooking.
