Cookie Dough
  • 1 cup unsalted butter (2 sticks) softened
  • 1 cup granulated sugar
  • 2.5 cups all-purpose flour

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C); then, line baking sheets with parchment paper or silicone mats.
  2. In a large mixing bowl, beat the softened butter and granulated sugar with an electric mixer until light and fluffy (2-3 minutes).
  3. Gradually add the all-purpose flour on low speed, mixing until just combined and being careful not to overmix.
  4. If the dough is too soft to roll, wrap and refrigerate for 15-30 minutes.
  5. Lightly flour a surface and roll out half of the dough to ¼-inch thickness before cutting out shapes with cookie cutters.
  6. Transfer cut cookies to prepared baking sheets, leaving space between them, and re-roll any scraps.
  7. Bake for 8-10 minutes until the edges are lightly golden.
  8. Let the cookies cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely.

Notes

For best results, ensure your butter is truly softened but not melted. You can also add a touch of vanilla extract for extra flavor, though it would then be a four-ingredient cookie!
