Delightful One-Pan Lemon-Dill Salmon and Roasted Veggies

Ingredients
  

For the Salmon
  • 2 fillets salmon fillets about 6 oz each, skin on or off
  • 1 tablespoon olive oil
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ½ teaspoon garlic powder
  • ¼ teaspoon dried dill
  • Lemon wedges for serving
For the Vegetables
  • 1 head broccoli cut into florets
  • 1 bell pepper red or yellow, seeded and sliced
  • 1 cup cherry tomatoes halved
  • ½ red onion thinly sliced
  • 1 tablespoon olive oil
  • ¼ teaspoon salt
  • teaspoon black pepper
  • ½ teaspoon Italian seasoning

Method
 

Preheat & Prep Veggies
  1. Preheat oven to 400°F (200°C). On a large baking sheet, combine all vegetables, drizzle with olive oil, and season with salt, pepper, and Italian seasoning. Toss to coat.
Roast Vegetables
  1. Spread the seasoned vegetables in a single layer on the baking sheet and roast for 10-12 minutes.
Prepare Salmon
  1. While vegetables roast, pat salmon dry. Whisk together olive oil, salt, pepper, garlic powder, and dill, then brush over the salmon fillets.
Add Salmon to Sheet
  1. After initial vegetable roasting, remove baking sheet from oven. Place seasoned salmon fillets on the baking sheet, clearing space as needed.
Bake Together
  1. Return the baking sheet to the oven and bake for another 12-18 minutes, or until the salmon flakes easily.
Serve Immediately
  1. Remove from oven, garnish with fresh lemon wedges, and serve hot.

Notes

Adjust baking time for salmon based on thickness; aim for an internal temperature of 145°F (63°C). For extra crispiness, you can broil for the last 1-2 minutes, watching carefully to prevent burning.
