Preheat & Prep Veggies
- Preheat oven to 400°F (200°C). On a large baking sheet, combine all vegetables, drizzle with olive oil, and season with salt, pepper, and Italian seasoning. Toss to coat.
Roast Vegetables
- Spread the seasoned vegetables in a single layer on the baking sheet and roast for 10-12 minutes.
Prepare Salmon
- While vegetables roast, pat salmon dry. Whisk together olive oil, salt, pepper, garlic powder, and dill, then brush over the salmon fillets.
Add Salmon to Sheet
- After initial vegetable roasting, remove baking sheet from oven. Place seasoned salmon fillets on the baking sheet, clearing space as needed.
Bake Together
- Return the baking sheet to the oven and bake for another 12-18 minutes, or until the salmon flakes easily.
Serve Immediately
- Remove from oven, garnish with fresh lemon wedges, and serve hot.
Notes
Adjust baking time for salmon based on thickness; aim for an internal temperature of 145°F (63°C). For extra crispiness, you can broil for the last 1-2 minutes, watching carefully to prevent burning.
