  • 2 (6 oz each) cod fillets
  • ½ teaspoon salt plus more to taste
  • ¼ teaspoon black pepper, freshly ground plus more to taste
  • 1 tablespoon olive oil
  • 1 shallot, finely minced or ¼ small onion
  • 2 cloves garlic, minced
  • 1 (13.5 oz) can full-fat coconut milk
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon lemon zest
  • ½ teaspoon red pepper flakes optional, for a hint of heat
  • 2 tablespoons fresh parsley, chopped for garnish

Method
 

Cooking Steps
  1. Pat the cod fillets dry and season generously with salt and pepper.
  2. Sear the cod in a hot skillet with olive oil for 3-4 minutes per side, then remove and set aside.
  3. Reduce heat and sauté the shallot until translucent, then add garlic and red pepper flakes and cook for another minute.
  4. Pour in coconut milk, lemon juice, and lemon zest; bring to a simmer and cook for 3-5 minutes until the sauce slightly thickens.
  5. Return the seared cod to the skillet, cover, and cook in the sauce for 5-7 minutes until the fish flakes easily.
  6. Garnish with fresh parsley and serve immediately with your preferred side dishes.

Notes

Adjust red pepper flakes to your preferred spice level. This dish pairs well with rice or steamed vegetables.
