Ingredients
  

For the Chicken:
  • 1.5 lbs boneless, skinless chicken thighs or breasts, cut into 1-inch pieces
  • 1 tablespoon olive oil
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
For the Mushrooms & Onions:
  • 1 tablespoon olive oil
  • 1 large yellow onion, thinly sliced
  • 8 ounces cremini mushrooms, sliced
  • 2 cloves garlic, minced
For the Balsamic Glaze:
  • 0.5 cup balsamic vinegar
  • 2 tablespoons brown sugar (or maple syrup)
  • 1 tablespoon unsalted butter
  • Fresh parsley or thyme, for garnish optional

Equipment

Method
 

Prepare the Chicken
  1. Pat the chicken pieces dry with paper towels and season with salt and pepper.
Sear the Chicken
  1. Heat olive oil in a skillet, sear chicken until golden and cooked through, then set aside.
Sauté Onions and Mushrooms
  1. Add olive oil to the same skillet, then sauté onions and mushrooms until softened and caramelized.
Add Garlic
  1. Stir in minced garlic and cook for one minute until fragrant.
Deglaze with Balsamic
  1. Pour in balsamic vinegar and brown sugar, then bring to a simmer, scraping up any browned bits.
Form the Glaze
  1. Reduce heat and simmer the sauce for 5-7 minutes until it thickens into a syrupy glaze.
Finish the Dish
  1. Remove the skillet from heat, stir in butter, and return the cooked chicken to coat in the glaze.
Serve
  1. Garnish with fresh parsley or thyme if desired, and serve immediately.

Notes

For an extra touch of flavor, you can add a splash of red wine along with the balsamic vinegar.
