  • 1/2 cup granulated sugar
  • 1 large egg yolk
  • 1 teaspoon vanilla extract
  • 1 ¾ cups all-purpose flour
  • ½ cup unsweetened cocoa powder
  • ½ teaspoon baking powder
  • ¼ teaspoon salt
Filling
  • 1/2 cup raspberry jam

Method
 

Preparation
  1. In a large bowl, beat softened butter and granulated sugar with an electric mixer until light and fluffy for 2-3 minutes.
  2. Beat in the egg yolk and vanilla extract until well combined, scraping the bowl sides as needed.
  3. In a separate bowl, whisk together flour, cocoa powder, baking powder, and salt.
  4. Gradually add dry ingredients to wet, mixing on low speed until just combined, being careful not to overmix.
  5. Cover the dough with plastic wrap and refrigerate for at least 30 minutes to make it easier to handle.
Baking
  1. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper. Roll tablespoon-sized dough portions into balls and place on prepared sheets.
  2. Press an indentation into the center of each cookie with your thumb or a small spoon.
  3. Bake for 8-10 minutes until edges are set. Remove from oven and spoon desired filling into indentations while cookies are warm. Return to oven for 2-3 minutes if filling benefits from warming (like jam).
  4. Let the cookies cool completely on a wire rack before serving.

Notes

For variation, try other fillings like chocolate ganache or caramel. Ensure butter is at room temperature for the best texture when creaming. The dough needs to be chilled for easier handling and to prevent spreading during baking.
