  • 2 lbs boneless, skinless chicken breasts or thighs
  • 1 packet (1 oz) taco seasoning
  • 1 cup chicken broth
  • 1/2 cup salsa mild, medium, or hot
  • small onion, finely diced optional
  • 2 cloves garlic, minced optional
  • 1 fresh lime, juiced
  • 1/4 cup fresh cilantro, chopped for mixing into chicken

Method
 

Instructions
  1. Place chicken breasts or thighs at the bottom of the slow cooker.
  2. Sprinkle taco seasoning over the chicken; add diced onion and minced garlic if desired.
  3. Pour chicken broth, salsa, and fresh lime juice over the seasoned chicken.
  4. Cook on low for 4-6 hours or high for 2-3 hours until chicken is easily shreddable.
  5. Shred the cooked chicken in the slow cooker with two forks.
  6. Stir in chopped fresh cilantro and mix thoroughly until the meat is coated.
  7. Keep warm in the slow cooker and serve with tortillas and your favorite toppings.

Notes

For extra flavor, consider marinating the chicken with a bit of the lime juice and seasoning for 30 minutes before slow cooking.
