  • 1 teaspoon dried rosemary
  • 1 teaspoon dried thyme
  • 1 teaspoon paprika (smoked preferred)
  • Salt and black pepper to taste
  • 1 tablespoon olive oil
  • Fresh parsley or chives for garnish

  1. Pat the chicken dry with a paper towel. Combine rosemary, thyme, paprika, salt, and pepper in a small bowl, then rub the mixture onto the chicken.
  2. Sear the chicken in olive oil for 2-3 minutes per side until lightly browned, then transfer it to the slow cooker.
  3. Add the chopped potatoes, onion, and minced garlic around the chicken in the slow cooker.
  4. Pour the chicken broth evenly over the chicken and vegetables.
  5. Cover and cook on low for 6-8 hours or on high for 3-4 hours until the chicken is tender and potatoes are fork-tender.
  6. Gently stir, adjust seasoning if necessary, and garnish with fresh parsley or chives before serving hot.

Notes

For extra flavor, consider browning the chicken before adding it to the slow cooker. This step creates a richer depth of flavor and better texture for the chicken. Always use low-sodium broth to control the overall saltiness of the dish.
