Crockpot Mediterranean Chicken with Feta and Spinach

  • 2-2.5 lbs boneless, skinless chicken thighs
  • 2 tbsp olive oil divided
  • medium onion, chopped
  • 4-5 cloves garlic, minced
  • 1 (14.5 oz) can diced tomatoes, undrained
  • 1/2 cup low-sodium chicken broth
  • 1/2 cup Kalamata olives, pitted and halved
  • 1 (14 oz) can or jar artichoke hearts, drained and quartered
  • 1 teaspoon dried oregano
  • 1/2 teaspoon dried thyme
  • Salt and black pepper to taste
  • fresh lemon half sliced for cooking, half for serving
  • 3-4 cups packed fresh spinach
For Garnish (optional)
  • 1/4 cup chopped fresh parsley
  • Crumbled feta cheese

Method
 

Cooking Steps
  1. Season chicken thighs with salt and pepper, then sear in olive oil in a skillet until lightly browned, transferring them to a slow cooker.
  2. Sauté chopped onion and minced garlic in the same skillet until softened and fragrant.
  3. Add onion-garlic mixture, diced tomatoes, chicken broth, olives, artichoke hearts, oregano, and thyme to the slow cooker with the chicken, and place lemon slices on top.
  4. Cook in the slow cooker on low for 6-8 hours or high for 3-4 hours until the chicken is tender.
  5. Remove lemon, shred chicken in the slow cooker, stir in spinach until wilted, and adjust seasonings as needed; serve garnished with parsley, lemon juice, and feta.

Notes

For extra flavor, consider marinating the chicken thighs for at least 30 minutes before searing. Adjust the amount of lemon and feta to your personal preference.
