These crispy garlic herb smashed potatoes are boiled until tender, smashed, and then roasted to golden-brown perfection with flavorful seasonings. They make a perfect side dish for any meal.

Main Ingredients
  • 1.5 - 2 pounds Small (or Baby) Potatoes Yukon Gold or red recommended
  • 1/4 cup Olive Oil or Avocado Oil plus extra for drizzling
  • 1 teaspoon Salt or to taste (fine sea salt recommended)
  • 1/2 teaspoon Black Pepper freshly ground
  • 1/2 teaspoon Garlic Powder highly recommended
  • 1 tablespoon Fresh Rosemary or Thyme chopped (optional)

Method
 

Cooking Steps
  1. Place potatoes in a large pot, cover with cold, salted water, and bring to a boil; then reduce heat and simmer for 15-20 minutes until fork-tender.
  2. Drain the potatoes in a colander and let them sit for 5-10 minutes to cool slightly and allow steam to escape.
  3. Preheat your oven to 400°F (200°C) and drizzle 2 tablespoons of oil onto a large baking sheet, spreading it evenly.
  4. Arrange the par-cooked potatoes on the baking sheet and gently smash each one to about 1/2 to 3/4 inch thick.
  5. Drizzle the remaining oil generously over the smashed potatoes and season with salt, black pepper, garlic powder, and fresh herbs.
  6. Bake for 30-40 minutes, flipping halfway through, until golden brown and very crispy on both sides.
  7. Remove from the oven and serve immediately while hot.

Notes

For extra flavor, you can finish with a sprinkle of fresh parsley or a squeeze of lemon juice before serving.
