Cooking Steps
- Place potatoes in a large pot, cover with cold, salted water, and bring to a boil; then reduce heat and simmer for 15-20 minutes until fork-tender.
- Drain the potatoes in a colander and let them sit for 5-10 minutes to cool slightly and allow steam to escape.
- Preheat your oven to 400°F (200°C) and drizzle 2 tablespoons of oil onto a large baking sheet, spreading it evenly.
- Arrange the par-cooked potatoes on the baking sheet and gently smash each one to about 1/2 to 3/4 inch thick.
- Drizzle the remaining oil generously over the smashed potatoes and season with salt, black pepper, garlic powder, and fresh herbs.
- Bake for 30-40 minutes, flipping halfway through, until golden brown and very crispy on both sides.
- Remove from the oven and serve immediately while hot.
Notes
For extra flavor, you can finish with a sprinkle of fresh parsley or a squeeze of lemon juice before serving.
