Method
 

Instructions
  1. Rinse and thoroughly drain the black eyed peas, then spread them on paper towels and pat them very dry for crispiness.
  2. Transfer the dried peas to a bowl, drizzle with olive oil, and toss until evenly coated.
  3. Sprinkle cornstarch over the peas and toss vigorously until they are lightly and evenly dusted.
  4. Add smoked paprika, garlic powder, onion powder, cayenne pepper (if using), salt, and black pepper, then toss until seasonings adhere.
  5. Preheat your air fryer to 375°F (190°C) for 3-5 minutes.
  6. Arrange the seasoned peas in a single layer in the air fryer basket; cook in batches if necessary to avoid overcrowding.
  7. Air fry for 12-18 minutes, shaking the basket every 5-7 minutes, until golden brown and crispy.
  8. Remove from the air fryer and serve immediately, as they are best enjoyed warm and fresh.

Notes

Ensure the black eyed peas are as dry as possible before coating for maximum crispiness. Adjust cayenne pepper to your preferred spice level, or omit for a milder snack.
