Ingredients
  

Truffle Mixture
  • 8 oz full-fat cream cheese, softened
  • 2 cups powdered sugar (confectioners' sugar)
  • 2 tablespoons fresh lemon zest from 2 organic lemons
Coating
  • 1/2 cup powdered sugar

Method
 

Preparation
  1. In a bowl, beat softened cream cheese with an electric mixer until smooth and fluffy.
  2. Gradually add 2 cups of powdered sugar and mix until combined, then beat until light and fluffy; fold in the lemon zest.
Chilling and Rolling
  1. Cover and refrigerate the mixture for 30-60 minutes to firm up.
  2. Once chilled, scoop portions of the mixture using a cookie scoop or spoons and roll them into smooth balls with your palms.
Finishing Touches
  1. Roll each truffle in the remaining powdered sugar until evenly coated.
  2. Arrange on parchment paper and refrigerate for another 15-20 minutes to set before serving.

Notes

For variation, you can try coating the truffles in shredded coconut, finely chopped nuts, or even melted white chocolate instead of just powdered sugar.
