  • 2 lbs Yukon Gold or red potatoes approx. 4-5 medium, scrubbed and cut into 1-inch pieces
  • 1/4 cup olive oil
  • 4 cloves garlic minced
  • 1 tbsp fresh rosemary finely chopped (or 1 tsp dried)
  • 1 tbsp fresh thyme finely chopped (or 1 tsp dried)
  • 1/2 tsp salt
  • 1/4 tsp freshly ground black pepper
For Creaminess (Optional)
  • 1/4 cup heavy cream or half-and-half optional, for extra creaminess
For Garnish
  • 2 tbsp fresh parsley chopped (for garnish)

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
Mixing and Roasting
  1. Combine potatoes, olive oil, minced garlic, rosemary, thyme, salt, and pepper in a large bowl, tossing until evenly coated.
  2. Spread the seasoned potatoes in a single layer on a baking sheet, using two sheets if necessary to prevent overcrowding.
  3. Roast for 30-40 minutes, flipping halfway, until they are golden brown, crispy, and fork-tender.
Finishing Touches
  1. If desired, drizzle heavy cream over the roasted potatoes, toss gently, and return to the oven for 5-7 minutes until the cream slightly reduces.
  2. Transfer to a serving dish, garnish with fresh chopped parsley, and serve immediately.

Notes

For crispier potatoes, ensure not to overcrowd the baking sheet. Doubling the recipe might require using two separate baking sheets and potentially increasing the roasting time slightly. Adjust seasoning to taste and feel free to experiment with other fresh herbs like oregano or chives.
