  • 1 small Onion, finely chopped
  • 2 cloves Garlic, minced
  • 10 oz Fresh spinach
  • 1 cup Vegetable broth
  • 1/2 cup Heavy cream
  • 4 oz Feta cheese, crumbled
  • 16 oz Potato gnocchi
Seasoning & Garnish
  • Salt to taste
  • Freshly ground black pepper to taste
  • Red pepper flakes Optional garnish

Method
 

Preparation
  1. Bring a large pot of salted water to a boil, then add the potato gnocchi and cook for 2-3 minutes, or until they float, then drain and set aside.
  2. While gnocchi cooks, heat olive oil in a large skillet over medium heat, add chopped onion and cook until softened for 3-5 minutes, then add minced garlic and cook for 1 minute until fragrant.
Cooking
  1. Add fresh spinach to the skillet, cooking in batches if needed, and stir occasionally until fully wilted.
  2. Pour in vegetable broth and heavy cream, bringing the mixture to a gentle simmer while stirring.
  3. Add cooked gnocchi and crumbled feta cheese to the skillet, stirring gently to combine until the feta softens and melts into the sauce, then season with salt and pepper to taste.
Serving
  1. Ladle into bowls and, if desired, garnish with red pepper flakes or fresh herbs.

Notes

For extra flavor, you can toast the gnocchi lightly after boiling until golden before adding to the sauce. This adds a nice texture contrast. Adjust the amount of feta cheese to your preference for a saltier or milder flavor profile.
