Ingredients

Steak and Seasoning
  • 2 about 1-inch thick sirloin, ribeye, or New York strip steaks
  • 1 tablespoon olive oil
  • Salt and freshly ground black pepper to taste
Parmesan Crust
  • 1/2 cup mayonnaise
  • 1/2 cup freshly grated Parmesan cheese
  • 2 cloves garlic minced
  • 1 teaspoon Worcestershire sauce
  • 1/2 teaspoon Dijon mustard
  • 1/2 teaspoon dried parsley
  • red pepper flakes optional, pinch

Equipment

  • Paper towels
  • Small bowl
  • Heavy-bottomed oven-safe skillet
  • Cutting board

Method

Prep Steaks
  1. Pat steaks dry with paper towels and season generously with salt and pepper. Let them rest at room temperature for 15-20 minutes.
Make Parmesan Crust
  1. Combine mayonnaise, Parmesan cheese, minced garlic, Worcestershire sauce, Dijon mustard, dried parsley, and red pepper flakes in a small bowl. Mix well until a thick paste forms.
Sear Steaks
  1. Preheat an oven-safe skillet over medium-high heat with olive oil until shimmering. Sear steaks for 2-3 minutes per side for medium-rare, or longer for desired doneness, until a dark brown crust forms.
Apply Topping
  1. Remove the skillet from heat and generously spoon the Parmesan mixture over the top of each steak, spreading evenly.
Finish Cooking
  1. Transfer the skillet to a preheated oven at 375°F (190°C) for 5-7 minutes, or until the crust is golden and bubbly. Alternatively, broil for 2-4 minutes, watching carefully.
Rest & Serve
  1. Remove steaks, transfer to a cutting board, and let rest for 5-10 minutes.

Notes

For best results, use good quality steaks and fresh Parmesan cheese. Adjust cooking times based on steak thickness and your desired level of doneness. Be sure to rest the steaks properly to keep them juicy and tender.
