Comforting & Creamy Crockpot White Chicken Chili

This comforting and creamy white chicken chili is perfect for a cozy meal. Made in a crockpot, it's easy to prepare and full of flavor.

Ingredients

  • 2 lbs boneless, skinless chicken breasts
  • 2 (15-ounce) cans cannellini beans (white kidney beans) rinsed and drained
  • 1 (4-ounce) can diced green chiles undrained
  • 4 cups low-sodium chicken broth
  • 1 medium onion chopped
  • 3-4 garlic cloves, minced
  • 1 tbsp chili powder
  • 1 tsp ground cumin
  • 1/2 tsp dried oregano
  • 1/4 tsp cayenne pepper optional
  • 1 cup frozen or canned corn drained
  • 4 oz light cream cheese softened and cut into cubes

  • Fresh cilantro chopped (for garnish)
  • 1 lime for serving

Method
 

Cooking
  1. Place chicken breasts, rinsed cannellini beans, diced green chiles, chopped onion, minced garlic, chicken broth, chili powder, cumin, oregano, and optional cayenne pepper in the slow cooker.
  2. Cover and cook on LOW for 6-8 hours or on HIGH for 3-4 hours until the chicken is cooked through and easily shreddable.
  3. Remove and shred the cooked chicken, then return it to the slow cooker.
  4. Stir in the corn and cubed, softened light cream cheese.
  5. Continue cooking on HIGH for 15-20 minutes, stirring occasionally, until the cream cheese melts and the chili is creamy and heated through.
  6. Taste, adjust seasonings, then ladle into bowls and garnish with fresh cilantro and a squeeze of fresh lime juice.

Notes

For an extra kick, add a pinch more cayenne pepper. Serve with your favorite toppings like avocado or shredded cheese.
