  • 1 15-ounce can chickpeas, drained and rinsed
  • 1/2 cup unsweetened plain plant milk, such as oat or cashew milk
  • 1/4 cup nutritional yeast
  • 2 tablespoons lemon juice, freshly squeezed
  • 1 clove garlic, minced (Or 1/2 teaspoon garlic powder)
  • 1 tablespoon olive oil
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon smoked paprika Optional
  • Salt to taste
  • Black pepper to taste

Method
 

Preparation
  1. Combine all ingredients, including drained chickpeas, plant milk, nutritional yeast, lemon juice, garlic, olive oil, Dijon mustard, onion powder, smoked paprika (if using), and a pinch of salt and pepper in a high-speed blender or food processor.
  2. Blend until the mixture is completely smooth and creamy, scraping down the sides as needed to ensure everything is incorporated.
  3. Taste the sauce and adjust seasonings; add more salt, pepper, or lemon juice as desired, and thin with additional plant milk if a less thick consistency is preferred.

Notes

This versatile sauce is excellent as a dip, spread, or as a creamy addition to pasta dishes and bowls. For a thinner consistency, incrementally add more plant milk until desired texture is achieved.
